Easy Egg Scramble

Despite the unfounded cholesterol scare of the last 15 years, eggs can be a healthy addition to anyone's diet. They contain all known nutrients except vitamin C! When possible, buy them directly from farms where the chickens are allowed to roam free and eat their natural diet, or purchase eggs marked DHA or or high omega-3 eggs.

Ingredients

6 eggs
1/4 cup heavy cream
3 Tbsp. melted butter or extra virgin coconut oil
Celtic sea salt, pepper
Few grains of cayenne pepper (optional)

Instructions

Beat eggs well. Add cream. Heat butter in skillet or pan; add egg mixture, cooking slowly, until of a creamy texture. Add salt and pepper to taste. If desired, add 1 cup of chopped turkey bacon, chicken, beef, peppers, or some cayenne pepper for variations in taste.
Serves 3–4.
